Beer School: how does barrel ageing work? | The Craft Beer Channel

397 ratings | 45968 views
Once upon a time all beers were barrel-aged. Now we have big metal fermenters and kegs instead, but some brewers are going back to the wood. In this episode of Beer School Jonny visits Brewdog and Siren Craft Brew to talk about barrel-aged beers – brews given extra depth by time spent mixed with wood and spirit. This alchemy creates some of the most complex and exciting beers in the world. SUPPORT US! This is an interesting video, but the audio is terrible.

We have bought new mics since then. Youtube doesnt pay so well at our level so had to save up!

Frankly I detest this barrel aged fad. If I want to drink liquor, the options are nigh unlimited, but now you go to a decent beer store and easily 60 to 70 percent of stouts are caught up in this nonsense and taste like communist factory runoff. What a shame to violate otherwise good taps with this nonsense.
Awkward Me (16 days ago)
I cannot disagree with you more. Not only are barrel aged counterparts significantly more difficult to hunt down than plain old stouts, the amount of character, depth, and nuance that barrel aging brings out of a beer is truly something to sit down and appreciate. Most of us don't drink these BA beers for the ABV. I used to cringe at the idea of a 12% beer. Then I tried Evil Twins Even More Coco Jesus and Founders Curmudgeon's Better Half, and I was hooked. We beer aficionados enjoy the experience of a barrel aged beer the way wine connoisseurs enjoy a fine glass of Cabernet Sauvignon. To each their own, but I (and I think the vast majority of the beer community) disagree with you. There is no bad beer. Only beer you enjoy, and beer you do not. Cheers.
The Craft Beer Channel (8 months ago)
Well i strongly disagree on the factory run - many of these beer rival fine wine for the depth and character - but there is also a big movement towards session strength, well made porters and stouts because that gap has been left so hopefully you will find it easier and easier to find what you like!

Love your videos but a good mic would really improve viewability
The Craft Beer Channel (2 years ago)
+E Mendez sadly we have an excellent mic but everywhere is so damned noisy. What we need is a sound man with a boom!
it don't even contain carbondioxide?
The Craft Beer Channel (2 years ago)
you mean is it carbonated? Usually from the barrel it will be packaged in bottle, can, lek or cask and carbonate there either naturally or by force.
atomkinder67 (2 years ago)
Why oh why did the Beer School series quit a year ago? Definitely wanting more!

How do I sanitize a wooden barrel?
MartinsBrew (1 year ago)
Alec Hemy no!
MartinsBrew (1 year ago)
Mohan Thomas steam! Do not use star san, I'm a manager at a brewery... it will also help the barrel expand and cause less leaking "loss of beer".
Alec Hemy (2 years ago)
Star San , get it nice n foamy ( I had same fear filling up my first firkin)

Winter iun Washington state is the season for bourbon imperial stouts. This season I have enjoyed 3 in bottles and 2 more are releasing late December. All these breweries are less than 40 minutes away, 1 in walking distance. Firestone Walker is in California and the 19th anniversary is a blend of, imperial stout aged in bourbon barrels, quad aged in brandy and bourbon barrels, imperial brown in bourbon barrels and an oat meal stout in bourbon barrels. That was fantastic.
The Craft Beer Channel (2 years ago)
+Race Frazier lucky you!
Robbert Roost (2 years ago)
Too bad you guys didn't mention Alan Sprints from Hair of the Dog Brewing. He was one big pioneer in barrel aging. Also, i'm looking forward to a new episode!
The Craft Beer Channel (2 years ago)
+Robbert Roost sadly we've never had beers from them!
f00dify (3 years ago)
I'm glad you covered barrel aging. I've started to love barrel aged beers especially bourbon barreled just as much as Porters (my favorite), and Stouts. I was hoping you do one on Porters. But I was kind of put off by the background noises and the boom boom sounds that were present during the interviews. Really brought the quality of the videos down in my opinion.

+f00dify filming in breweries has its challenges!

Neato! Very interesting.

Fantastic video and informative but the interviews are let down by your sound. Shame.
+The Craft Beer Channel Totally understandable, if you ever need help with filming our Matthew is a good videographer, and access to goo kit ;)
The Craft Beer Channel (3 years ago)
+Food And Drink In Seconds +Taz Mattar sadly filming in a working brewery has its challenges, and as hobby film makers we have our budgets! Hopefully the latter will change one day.
+Taz Mattar Have yo admit, we thought the same...!
Ole P. (3 years ago)
Certainly one of your best videos. Again congrats that even I as a nerd thought I learned a thing or two. Well done guys. Now I have an insane thirst for BA beer though....maybe a Siren Maiden 14 or a Pirate Bomb I have in my fridge.
The Craft Beer Channel (3 years ago)
Awesome! We learn so much doing these beer school videos too. Never even considered dry hopping after barrel ageing!
Luke Menniss (3 years ago)
Get your hands on some of the Canterbury Brewers' barrel-aged stuff from The Foundry. They make some pretty special stuff in small batches.
The Craft Beer Channel (3 years ago)
We've been there! Had a lovely vanilla stout if I remember right.

+ +Blaat Kip ture. Work whit what you got and make the best whit it.
Blaat Kip (3 years ago)
+The Craft Beer Channel To be fair, all it takes is having whoever's manning the camera wear some headphones so they can listen to the audio and notice during the interview when people are rubbing the microphone.
The Craft Beer Channel (3 years ago)
We'd love to but sadly mics capable of more than what we have right now a insanely expensive, and we spend all our money on travel to cool breweries...
tomber220 (3 years ago)
Great video and answered may questions I had in the subject so thank you very much :)

You're very welcome!

AdamsCraftBeerChannel (3 years ago)
haha I was only joking Jonnie! No schedule here. It's only a hobby, not a professional channel like yours. Great minds DO think alike... and any mind that enjoys barrel aged beers is a great one indeed
The Craft Beer Channel (3 years ago)
+AdamsCraftBeerChannel sorry for messing with your schedule! Great minds think alike though, right?
AdamsCraftBeerChannel (3 years ago)
Not yet man, I will have it up on the channel in a couple weeks. Going to delay it so that people don't think im copying you ;) haha
The Craft Beer Channel (3 years ago)
