Jonny's back in his favourite London pub and has persuaded them to tell him (and you!) how to make their signature shortrib, the Jacobs Ladder. Aged beef slow cooked over night then glazed and roasted, it's just about the best bit of beef on the planet. And paired with a red ale or black IPA it's just sensational. So the sweetness from the glaze all comes from the carrots? No added sugar needed to get it sticky?

I've avoided using beer because of the idea that it can ruin a dish by turning incredibly bitter. Seeing all the possibilities is just great, so keep the inspiration coming! +Roy S. once it's cooked down so far there is lots of sugar from all the ingredients (save maybe the thyme!) so no need to add any.

Beef short ribs and brisket and my all time favorite meats. When I lived in the US, smoking a brisket all day was something I relished. Braising short ribs in a milky stout with loads of roasted root vegetables...sigh.

Interesting. I am a veggy myself, but I think I can treat my folks or some other special person to this some time. I´d be tempted to add something like a porter or quad to the sauce or meat boil though...and not use Tabasco but something else since I am not only a craft nerd but also a chili head. This just screams a bit of chipotle to me. That smokey note...

I've noticed quad ales go well with BBQ pulled pork here in the states will try this soon. One thing I've noticed from your vids is you tend to frequent pubs that have lagunitas on tap often. Is that for the availability or you really like Lagunitas? You should make a tour of the US one day and see as many breweries as possible here in the states. Craft beer has exploded here in recent years you'd be amazed the great stuff that doesn't even make it out the state mate.

+Al3xTrucho20 don't we know it! We're desperate to get to the States but budgets are too tight at the moment. We're working on ways though, and in the meantime we have UK, Belgium, Germany and Czech to cover. As for Lagunitas it's both - we love it and it's also readily available here. Got a video on quads coming up soon also!

Cheers! Depends if you're in the US or not. Over in the UK it is because they don't have a decent importer/import route I guess. Nothing of theirs has blown me away yet.
