THAT'S RIGHT BITCHES. Jonny out does himself with a banging roast beef marinated in garlic, rosemary and Nogne O porter. It creates a gorgeous crust, and soft, sweet meat underneath. Wood-fired oven not required.

Still seems like a great little bread, easy to make for a meal like the clams. As for the stew I made, it was easypeasy really, just saute some celery, onion, carrot, fennel and garlic. Add some tomato puree, and if you'd like some tinned tomatoes as well (make sure you bake of the acidity in the tomatopuree). Add about 100-200ml of weissen, to your liking, and some fishstock Eyeball it, you want enough liquid to poach the fish but not so much it becomes soup. When it starts to simmer, add the white fish that you'd like to eat and is in season. Most white fish will be done in about 10 minutes. Add some freshly chopped parsley right before serving, and that's it really. I've considered using an IPA, but I think the hoppy bitterness will be too much, where as a weissen has a nice balance between sweet and bitter. I feel for this, you don't want a whole bottle of weissen, since it'll be to overpowering.
Added yeast, let it prove, didn't use a hoppy beer! Basically everything! Though that bread is great with the creamy sauce as it's very bittersweet so cuts through.
